1) For a map not to "leak" it needs to be sealed off from the outside void. That is, think of the void as water. If your anything inside your map touches water, it is not good- and if it is not sealed, water will get in. You have to use the "caulk," which is found in the texture browser, to seal your map. You can do this two ways- make a large hollow cube around your map, and make it out of caulk (if it is an outdoor map), or you can just make sure there are no holes in the outer walls of your map, and make the outside surface caulk.
You can use any texture, as long as it has been set to 'structural' and not 'detail' in the brush tab; it also doesn't have to be a surrounding cube, as long as the entities in the map are sealed off.

Arches are another type of of patch, you can make them by creating a brush at the top of the hallway [the depth of the brush will be the maximum depth of the arch, etc.], curve -> endcap, rotate 90 degrees on the X axis, matrix -> invert selection, curve -> cap selection -> inverted endcap.
Select using Shift, and texture.
