How come people's demo's / clips still are jerking when they have been recorded? there like not smooth...

it's because they were probably having connection problems with the server, like packetloss, ping variations, etc

Thus the demo itself is not smooth (it has nothing to do with the FPS while playing online, recording, or playing the demo)

The power of prediction:
1. Take the mega to remove support for opponent.
2. Hit opponent with nex to put a strain on health.
Opponent now has 2 escape routes:
a. hallway
b. teleporter
3. Spam stairway to cut off hallway
4. Rocket the teleporter, as this is the only remaining option
5. Drop down from ledge to force a decision
6. Frag

Here's my Frag of the Month. Watch the con_notify at the top and you will see that It says that I blasted him, even though I shot him with the nex. The nex shot hits him and simultaneously blows up his rocket.
